A Southeast Asian Dinner with Bryan Koh

A confluence is where rivers meet.

Across Southeast Asia, waterways have long carried people, produce, recipes and ideas from one place to the next. Along their banks, cuisines borrowed freely from one another. A handful of herbs. A different noodle. Fermented fish where shrimp paste once was. Coconut giving way to tamarind. Familiar dishes taking on entirely new accents a few hundred kilometres downstream.

For this dinner, Bryan follows those currents through Myanmar, Laos, Malaysia and Indonesia.

There are fragrant broths, fish, slow-cooked meats, fistfuls of herbs, sharp citrus, gentle smoke and the deep savouriness that comes from knowing exactly when to ferment, toast or char.
